Mixed Berry Protein Muffins

Here's What You Need

  • 1 c almond flour
  • 2/3 c mixed berries
  • 1/4 c coconut oil
  • 1/2 c pure maple syrup
  • 1 c almond butter
  • 3 eggs
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 c chopped nuts or whole rolled oats for texture optional

Here's What You Do

  1. Preheat oven to 350F.

  2. Sift together all dry ingredients.

  3. Slowly add all remaining ingredients except for mixed berries, being careful to not over-mix. Gently fold in mixed berries. (If you are using nuts or whole oats for texture, you can add these in with the berries as well).

  4. Divide batter evenly in a lightly greased muffin pan.

  5. Bake for 18-22 minutes or until golden brown and toothpick inserted comes out clean.

  6. Enjoy!

Recipe Notes

  1. The batter may seem a bit thick- that is normal!
