Peanut Butter Honey Oat Bars

Here's What You Need

  • 1 c whole rolled oats
  • 1 c coconut flakes
  • 1/4 c almond flour
  • 3/4 c peanut butter
  • 1/4 c honey
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 c dark chocolate (a baking chocolate or bark will work best, as it will hold solid)
  • 1/4 c peanut butter

Here's What You Do

  1. Combine oats, coconut, and almond flour. In a separate bowl, combine peanut butter and honey, then microwave until just melted and combined. Stir in vanilla and salt.

  2. Mix peanut butter with oat mixture.

  3. Spread mixture in the bottom of a square casserole dish.

  4. Melt chocolate and peanut butter, stirring as you go.

  5. Spread peanut butter chocolate mixture on top of oats.

  6. Refrigerate for 2-3 hours until well set. Cut and serve!

Recipe Notes

  1. You can use any chocolate you like, but I prefer very dark chocolate. You can also use whatever peanut butter you like, but I prefer an all natural chunky peanut butter.
