Sugar Free Glazed Carrots

Here's What You Need

  • 1.5 lbs carrots sliced diagonally
  • 2 tbsp butter
  • 1 tsp stevia
  • 1 tsp vanilla
  • salt as needed
  • water as needed
  • parsley if you're feeling fancy

Here's What You Do

  1. Pour water over carrots until just covered. Add melted butter and Stevia and bring to a boil. Reduce to a simmer, add vanilla, and continue cooking until almost all water is absorbed and the carrots are tender but still firm (not falling apart). This should happen at the same time. Toss in parsley and serve hot and enjoy!
