I don’t normally like it when people say anything is the easiest because I’m usually like, “how do you know there isn’t something easier out there?”
But seriously, y’all.
This grain free granola really is the easiest granola I have come up with. AND it’s clean. Heck, technically it’s paleo. Or is it? I don’t really know if stevia is paleo or not, and if it’s not, I’ll probably (definitely) never be paleo.
It’s easy because it literally only has two hands on steps before putting it into the oven, and it only has 4 ingredients (sort of).
I considered my nuts and seeds to be one ingredient, even though I used quite the variety, because I mixed them all together and measured them as one ingredient. I wanted the simplicity of saying “seven cups of dried nuts and seeds” rather than a recipe that called for eight different things in various measurements. This way, whatever is in my pantry is fair game- as long as it equals seven cups!

So you have seven cups of nuts, seeds, and dried fruit (if you want), and then some egg whites, stevia, and vanilla! There’s no sugar, no dairy, no peanut butter and honey or anything else sticky, and it tastes delicious. Eat on granola or eat it like a bowl of cereal with whatever milk you like. If you must, you can even drizzle some of that sticky honey I was referring to all over the top!

The Easiest Grain Free Granola
Here's What You Need
- 7 c dried nuts, seeds, and fruits (your choice!)
- 1 c stevia baking blend
- 7 egg whites
- 1 tbsp vanilla
Here's What You Do

Preheat oven to 200F.

Whisk together egg whites, stevia baking blend, and vanilla. Toss dry ingredients in the egg white mixture until well coated. Place in oven for 45 minutes. Remove and flip (as best as you can using a spatula). Return to oven for 30-45 more minutes or until nuts are crispy! Enjoy on yogurt or as your morning cereal with your choice of milk!
