More chili? Yup, always more chili. If you happened to read my Fall Bucket List, you might know that we are basically obsessed with chili and cornbread, and pretty much have it every chance we can throughout the Fall season! And while I absolutely adore my family’s recipe that we have used since before I was even born, I really like to spice things up. I need change, and I crave trying new things. I have done quite a few variations, including this delicious vegetarian chili, but I can honestly say I have never loved a chili so much as I do this harvest chicken chili….
Y’all want to know what everyone needs more of in their life? Pumpkin pecan baked oatmeal. That’s what. I mean, really, just baked oatmeal in general… but bonus points if it’s pumpkin. We love baked oatmeal around here. It’s entirely delicious, super easy, stores for a long time, and totally loved by everyone in the house. We look for new ways to enjoy it on the regular. Because it is Fall and everything around us reflects that, pumpkin was the obvious choice for us this time….
The world knows it by now… I love Fall with my whole heart. I was just telling my husband that I feel like all is right in my world when the leaves start to turn colors and the air cools down. Every day feels like a dream come true to me in the Fall. As L.M. Montgomery says, I’m so glad I live in a world where there are Octobers.
If you read my Fall Bucket List, then you already know this, but every year we have a party to celebrate Fall. We just recently had our Happy Fall party, and good grief, I wish we could do that every single day of the entire season. This Happy Fall party may have been my favorite so far. We played festive music, drank our own homemade pumpkin spiced coffee, and had an absolute FEAST. Every year it’s a little bit different, but with some similarities. This year’s feast was pumpkin oat pancakes with toasted pecans, maple syrup, and maple glazed apples. All God’s people said… AMEN.
These pumpkin oat pancakes were unlike any other oat pancakes I have ever made. They were seriously the fluffiest and most filling pancakes we have had in quite some time. They also held together like no other oat pancakes I have made. If you like pancakes, but need to actually feel full, these are for you!…
You know when you fight with your husband over who gets the leftovers, you have come up with someone worth sharing.
Or wait… not sharing?
This was our story this weekend. We created a dish that was so amazing that we just had to share… but then neither of us wanted to share when it was time to enjoy the leftovers….
I grew up in a not-so-well known part of Alabama. People say all kinds of stuff about the South and it certainly has lots of stereotypes, many of which are certainly true, but one thing the South really has going for it is the Appalachian Mountains.
What does this have to do with pumpkin butter?
I warned y’all—pumpkin everything, all the time.
The good news is, it’s officially fall, so no one can say it’s too early for it.
I seem to always want to create things on Sundays. Part of that is just our cozy Sunday routine, and part of it could be that we haven’t found a church the entire time we have lived here, and since I experience so much of God in the kitchen, I find myself seeking Him there on Sundays and having my own little church….
It’s officially pumpkin season.
Actually, the haters are hating and saying it’s not yet pumpkin season, and that we need to keep the pumpkin craze to a minimum until September 21.
But haters gonna hate, ya know?
Some people are totally mesmerized by the winter season and all of its Christmas charm, other loves Spring and its full blossoms of all beautiful things, and others love Summer and all of her pool parties and fresh fruits.
But me? I love Fall.
