I love Thanksgiving- like LOVE it. I pretty much look for ways to make my meals resemble all the tastes and feelings of Thanksgiving- ALL YEAR LONG.
One of my favorite parts of Thanksgiving is that is pretty much acceptable to make any vegetable as sweet as dessert, and feel no guilt, because it’s Thanksgiving.
One thing that my family did for Thanksgiving was glazed carrots. I absolutely love them, but can’t justify all the sugar when I am trying to eat healthy the other 364 days of the year.
With health in mind, but with a goal of creating delicious glazed carrots, I came up with this sugar free glazed carrot recipe, and I do not think you will be disappointed!
It’s super simple- so simple that I am not even going to walk you through it! I will just give you the recipe, then post a few photos so you can get to cooking that much faster!

Sugar Free Glazed Carrots
Here's What You Need
- 1.5 lbs carrots sliced diagonally
- 2 tbsp butter
- 1 tsp stevia
- 1 tsp vanilla
- salt as needed
- water as needed
- parsley if you're feeling fancy
Here's What You Do

Pour water over carrots until just covered. Add melted butter and Stevia and bring to a boil. Reduce to a simmer, add vanilla, and continue cooking until almost all water is absorbed and the carrots are tender but still firm (not falling apart). This should happen at the same time. Toss in parsley and serve hot and enjoy!
