If you’re anything like me, you might just absolutely love granola, but absolutely hate how much sugar and wheat is crammed into most of the store bought options.
For the last few weeks I have basically been avoiding greek yogurt (which used to be a breakfast staple for us) because I just really need granola with my greek yogurt, but I just couldn’t seem to find the right one. I finally decided that I was desperate enough to have my yogurt that I would make a granola.
I have worked on a few granolas in the past, but for some reason I just wasn’t quite sold on any of them. Some thing was missing. You know… that granola-y granola thing… the thing about granola that makes you want a little bit in every single bite of your yogurt or your smoothie bowl.
The sweetness that’s not overwhelming, but just right.
The variety of flavors and textures that fit perfectly together.
The crunchiness that isn’t too hard, but isn’t soft.
The hint of vanilla that isn’t overpowering, but is strong enough for you to know it’s there.
You know…. that.
I needed that granola-y thing.
So I got to work again, and I came up with this delicious maple almond granola. It’s gluten free, as always, and it’s free of refined sugar. It’s also nutrient dense with almonds and flaxseed.
Most importantly, it’s very granola-y granola.
It’s a super easy recipe- mix everything in one bowl, spread it out on a cookie sheet, stick it in the oven, and do your nails (or something) while you wait.
Enjoy on your yogurt, on a smoothie bowl, as a snack on hike, or in a bowl with your choice of milk! However you have, you’re sure to love it!
