I am a HUGE fans of meals that can be cooked in one pot. I mean, I know you can do almost anything in the crockpot, but I love a good stove top, skillet meal that leaves me with only one major dish to clean.
More importantly, I love meals that allow various ingredients to really absorb flavor from one another.
I also love lemon, chicken, and asparagus, so I figured I could combine the three and create a meal that really benefits from being cooked in one pot.
Bonus factor- it’s super healthy and totally guilt free.

One Pot Lemon Chicken
Here's What You Need
- 2 large chicken breasts cut into halves
- 1 lb fresh asparagus chopped into 1-2 inch pieces
- 1 tbsp coconut oil use olive oil if you prefer
- 3 tbsp minced garlic
- 1 tsp black pepper
- 1 tsp salt
- 3 tbsp lemon juice
Here's What You Do

Heat oil in medium saute pan over medium heat. Add minced garlic and saute until nearly browned.

Add chicken, presentation side down (presentation side is the pretty side). Pan sear chicken (*this means to leave your chicken on that one side until is cooked half way through, and you can see that it has started to cook up the sides of the pieces. Your chicken should also be a golden brown-ish color on that first side when you turn it over). Flip chicken to cook second time.

At this time, add the asparagus, salt, pepper, and lemon juice. In the time it takes to cook that second side of the chicken, the asparagus will be completely done. You will want to watch it, as asparagus can overcook very quickly if you aren’t careful. You can stir the asparagus as it is cooking- this will help to spread the flavors across the pan- just be careful to not move your chicken around a lot!

When your chicken has reached 165F, and your asparagus is tender but still crunchy, you are good to go! Serve the chicken and asparagus on a bed of fresh spinach. The juices from the pan will act as a dressing of sorts! Garnish with fresh lemon slices if desired!
