Back in the day (whatever that means), I absolutely loved cheese and crackers. I could slice a block of cheese and eat it with club crackers until I was too sick to stand.
But that was bad. So I stopped.
I didn’t stop loving it, I just stopped doing it.
I have wanted to come up with a grain free cracker for a long time because those little round rice cracker things just don’t cut it for me. I need something with more flavor and with a texture that doesn’t resemble plywood. Or cardboard.
A few weeks ago, Daniel randomly said, “Hey have you ever thought about coming up with your own cracker?” And somehow that was exactly the push that I needed to go for it and make my own cracker.
I needed it to be grain free, have some nutritional value (mainly protein and fiber), be crunchy, and be full of flavor. That’s not too much to ask, right?
Oh, and they needed to hold together, because I am not into the whole cauliflower crust and bean brownie thing. I wanted my cracker to taste and feel like a cracker.
So I decided to use ground flaxseed along with a bit of whole flaxseed.
Daniel affectionally referred to them as my wheatless thins, and although I think that is hilarious, I couldn’t bring myself to call them that.
In case you are wondering why I chose flaxseed, it was because they are high in fiber and protein, and they bind well. That’s why many vegan recipes use flaxseed and water as a replacement for eggs. They give structure where there is none.
For this particular cracker, I chose to keep it pretty simple (although I will experiment with different flavors of crackers in the future).
I used ground flaxseed, flaxseed, salt, pepper, garlic powder, and water.
That’s it.
I mixed it all together and threw it on a sheet pan, then I precut the sections and baked it for 30 minutes.
And VOILA!
Grain free, dairy free, entirely vegan crackers!
For reference, I cut mine in little squares and got 64 crackers. How you cut them will determine how many you get!

Homemade Flaxseed Crackers
Here's What You Need
- 1 c ground flaxseed
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 2 tsp flaxseed
- 1 c water
Here's What You Do

Preheat oven to 400F.

Combine all dry ingredients in a large bowl.

Slowly incorporate water into dry ingredients to form a sticky dough.

Spread dough onto baking sheet (you can line with parchment paper if desired). The dough should spread to be about 1/8" thick.

Gently precut squares into the dough using a sharp knife. It is okay if it doesn't cut all the way through. As long as the sections are there, the crackers will easily break apart.

Bake for approximately 30 minutes or until crackers are brown and crunchy.

Remove from oven and let cool before breaking apart.

Enjoy with cheese, almond butter, or any spread of your choice!
