More chili? Yup, always more chili. If you happened to read my Fall Bucket List, you might know that we are basically obsessed with chili and cornbread, and pretty much have it every chance we can throughout the Fall season! And while I absolutely adore my family’s recipe that we have used since before I was even born, I really like to spice things up. I need change, and I crave trying new things. I have done quite a few variations, including this delicious vegetarian chili, but I can honestly say I have never loved a chili so much as I do this harvest chicken chili.
It’s legit. It’s creamy, hearty, full of unique flavors to excite your taste buds, and totally clean. Oh, and it’s totally adaptable. If you don’t eat meat, just swap the chicken for chickpeas or cubed butternut squash. The absolute best part is that everyone that has tried it has absolutely loved it. And that’s what makes a recipe a true winner around here.

You can double this recipe and have it multiple times throughout the week. This is a major bonus for all of y’all that are hustling to your kids’ football games and school parties, and for all you nurses working doubles because people are crazy and get themselves hurt throughout the holiday season.
Trust me on this one, y’all. This harvest chicken chili is the bomb and I am not even sorry that I may have eaten three bowls in one sitting.
