Have you ever stared at the cereal aisle with desperation in heart and eyes because you want so badly to consume all the colorful shapes and characters inside the perfectly rectangle boxes, but know that it’s simply not worth it?
Or is that just me?
I love cereal- a lot. I don’t love that I am never full- no matter how many bowls I have- and I don’t love that there’s basically no substance, nor nutritional value to the vast majority of cereals, including the ones labeled as “healthy.”
I decided to come up with a grain free and entirely delicious “cereal” to satisfy that need in my heart.
This is sort of one of those “do your own thing” sort of recipes- basically, there’s a general rule/formula, and if you stick to the ratios, you can be as creative as you want with the ingredients.
Here’s the breakdown:
1 egg white, 1 tsp vanilla, and 1/2 teaspoon stevia per every cup of dry ingredients.
For the dry ingredients, you can use any combination of seeds and nuts you want.
Here are some ideas, in case you need inspiration: almonds, cashews, walnuts, pumpkin seeds, sunflower seeds, flaxseed, chia seeds
Here’s how I made it happen…

Grain Free Cereal
Here's What You Need
- 2 c mixed nuts
- 2 egg whites
- 2 tsp vanilla
- 1 tsp stevia
- cinnamon to taste optional
Here's What You Do

Preheat oven to 375F.

Whisk the egg whites, vanilla, stevia, and cinnamon (if using) together. Toss nuts/seeds in egg whites, making sure to fully and evenly coat all pieces.

Spread mixture onto baking sheet and bake for 90 minutes, removing to stir after 45 minutes.

The cereal will be sweet and crunchy- the longer you leave it in, the crunchier, but don’t forget about it or else they will become almost powdery!

Serve with fresh berries and almond milk! (or any milk of your choice!)

- I used chopped pecans, cashew pieces, and almonds- and I added a little bit of chia seeds.

Great idea! It sounds like a great versatile recipe too- you could do pumpkin spice version, for example. I am all about recipes that you can change up based on what you have on hand or what you are in teh mood for. I’m excited to try this!
