Y’all want to know how this happened? Somebody told me pizza isn’t for breakfast and I was like… watch me.
But also, it happened because my friend Bridgett asked for it.
We absolutely love pizza and we absolutely love breakfast, so why not? The only thing I was set on was making it healthy. While I may enjoy a real quality pizza crust loaded with my favorite toppings, I always like to start my day with a clean and healthy breakfast.
Unless it’s Saturday. Then anything is fair game.
But since not every day is Saturday, I had to come up with a healthy but delicious option.
So this grain free breakfast pizza with greek yogurt and berries was birthed.
I have been on an almond flour kick for a few months now, so that was my obvious choice. It’s grain free, loaded with fiber and protein, entirely filling, and entirely delicious. Also, fun fact, you can totally use this same crust for a grain free pizza on a night when you aren’t feeling like having the real dough-y dough.
For the sauce, I used a plain nonfat Greek yogurt. You can certainly use full fat Greek yogurt, or even a regular or non dairy yogurt, but this is what works best for my husband.
After the sauce, I sprinkled some cinnamon on it and then drizzled a little honey on as well. Then I simply topped the pizza with fresh berries (you can really use any you want) and drizzled more honey evenly across the whole pizza. As a final touch, I tossed half a cup of chopped almonds on the top.
You can keep it classy and eat these slices with a fork, but if you really want the pizza experience, you’ll be happy to know that these slices hold their shape well enough to be picked up.
This recipe is super adaptable. Make it dairy free if you want by using a non-dairy yogurt. Replace the honey with maple syrup if you want to share it with your babies. Use any combination of berries and use any nut you want!
Most importantly, enjoy it. Pizza for breakfast is a good thing.
