Alright, y’all. I need to apologize. I have been so wrapped up in my new eBook– which by the way, I am STOKED about- that I have totally neglected the rest of my life.

Okay, so I may have neglected posting for a week. The good news is that during that week something crazy happened and it feels like summer outside. Do you know what that means?
EVERYTHING GRILLED.
Okay, maybe not everything. But seriously as much as possible without it being weird or gross.
Because pies shouldn’t be grilled.
But chicken, steak, burgers, potatoes, corn on the cob, eggplant, and even fruit- all those things should definitely be grilled as much as possible.
You know what else should be grilled?
Squash. Alllllllllllllll the squash.
We absolutely love squash around here, so we throw in as many things as we can. Honestly though, sometimes we just want a nice plate of squash without all the hype.
So we did just that this weekend. We broke out my husband’s awesome grill and smoker, threw some chicken on it, and stuffed our faces with watermelon.
As far as a side dish, squash was our number one pick.
And y’all, this could NOT have been more simple (unless we just ate it raw).
I cut up two zucchini squash and two summer squash, threw them in a large Ziploc, added olive oil, salt, pepper, and crushed garlic, and shook it like crazy until it was all evenly coated.
Then I spread out a piece of aluminum foil and spread the pieces on it before wrapping it up like a pretty little platinum package.
After it was all wrapped up, we put it on the grill and let it cook the same amount of time as our chicken- approximately 15 minutes.
Then we devoured it so fast that we almost forgot to get photos.
But first, we took a.. well, it was a squash selfie.
Seriously though- looking for a great summertime side dish with little hassle and little guilt?
