If you have been keeping up with me at all lately, you might know that I am wee bit obsessed with avocado anything right now (and probably forever).
I honestly can’t help it. There’s just something so perfect about them that they keep finding their way into every category of food… They are in my smoothies, my salads, my burrito bowls, my enchiladas… and now they are in my dressings.
Y’all… I… Can’t… STOP.
The creaminess and texture alone would do it for me, but they are just so subtly sweet and entirely satiating.
So I just keep finding more and more ways to eat them.
This time I wanted a little dressing for a quinoa power bowl just to amp up the flavor a little bit. I figured the power bowl NEEDED avocados, so I might as well get creative and find a new way to enjoy them. I absolutely love sweet and spicy combos, and since I usually add about four gallons of hot sauce to my power bowl, I figured adding a sweet and creamy contrast would be the perfect way to go.
So I whipped up this sweet and creamy honey avocado dressing and I am happier than a pig…
Well, never mind that. My mom always had this saying about a pig, but since I don’t really know my audience personally, I will keep it to myself.
It was GOOD.
Four simple ingredients: Avocado, Lemon juice, greek yogurt, honey.
And want to know a secret? I just dumped it all in the food processor until it was creamy. You can’t beat that… a four ingredient, one step dressing.
Oh, and if you can’t do dairy, there’s any easy way to substitute almond milk for greek yogurt.
Even more good news? You can eat it on power bowls, burritos, salads, enchiladas, burgers, or whatever else you want! You can just dip carrots and peppers in it for a little snack if you like, too.
It’s entirely simple, entirely versatile, and entirely delicious.
