Does anyone not love muffins?
How could you not? They’re little little fluffy nuggets of sweetness and texture with little treasures hidden on the inside. They’re just so delicious and completely satisfying.
If I am being honest, muffins are probably the one thing I truly struggle to have self control with. Luckily for me, most of the muffins in the shiny cases at cafes are not gluten free, so all I can do is look at them. But when a gluten free muffin crosses my path- Lord help me….
I absolutely love Lara Bars. I think they taste like a candy bar, and I love that I don’t feel guilty after eating one.
I also love that they are called Lara Bars, because when people are confused about how to say my name, I can just say, “it’s pronounced like Lara Bar.”

You may or may not have picked up on this, but I just love oats.
I like them in traditional oatmeal form, cookies, muffins, cobblers, on my yogurt, and especially as baked oatmeal.
Sometimes I feel like I get stuck in a rut when it comes to my baked oatmeal. I have my few favorite things that I love- peanut butter baked oatmeal, peanut butter chocolate chip baked oatmeal, mixed berry baked oatmeal, and of course pumpkin baked oatmeal. Okay, I have a confession, I actually made these almost a week ago, but I really didn’t want y’all to think that all I ever eat is muffins.
I do love a good muffin, but it’s actually pretty rare that I get to eat one unless I come up with a moist and delicious gluten free option in my own kitchen.
You know what is even more rare? Eating a bagel. Because… well, everyone knows that all the best bagels have gluten in them. Normally this would not be a problem, because people eat bagels for the cream cheese, right?…

Actually, the haters are hating and saying it’s not yet pumpkin season, and that we need to keep the pumpkin craze to a minimum until September 21.

I have been wanting to work on ratios for honey, so I felt like this was a great opportunity to figure out what works and what doesn’t. I don’t personally feel the need to use honey instead of sugar in baked goods because, well, it just doesn’t make a difference to me if the “sugar substitute” will raise my blood sugar just as much as the sugar itself.

This was seriously the result of probably 17 failed attempts to come up with the perfect muffin recipe. I was so close to giving up, but then I couldn’t waste the four ripe bananas on my counter so I had to try again.
Also, perhaps you don’t like bananas? (How’d you get here?)…
Have you ever stared at the cereal aisle with desperation in heart and eyes because you want so badly to consume all the colorful shapes and characters inside the perfectly rectangle boxes, but know that it’s simply not worth it?

I love cereal- a lot. I don’t love that I am never full- no matter how many bowls I have- and I don’t love that there’s basically no substance, nor nutritional value to the vast majority of cereals, including the ones labeled as “healthy.”…
