More chili? Yup, always more chili. If you happened to read my Fall Bucket List, you might know that we are basically obsessed with chili and cornbread, and pretty much have it every chance we can throughout the Fall season! And while I absolutely adore my family’s recipe that we have used since before I was even born, I really like to spice things up. I need change, and I crave trying new things. I have done quite a few variations, including this delicious vegetarian chili, but I can honestly say I have never loved a chili so much as I do this harvest chicken chili….

Easy Steak Fajita Salad
It’s been way too long since I shared a salad recipe, y’all. It’s not because we haven’t been making salads. It’s because I am usually so dang hungry on salad night after working out that I just can’t take the time to create something new and photograph it! I always think I can do it, but my hunger is so much bigger than I realize. BUT- I finally found the time to prepare a new salad, test it out, take photos, and write about it- on a rest day. Because it seems like that’s the only time I can.
Since my husband and I both love any food that has any sort of Mexican flare, we decided to go with a fajita style salad. We are also super into peppers and onions, and were both craving those, so a fajita style salad seemed like just the right fit.
My husband and I are also steak lovers, but we try to avoid a ton of red meat in our diets. Now, don’t get me wrong. We do eat it from time to time, we just try to be super intentional about the quality of the meat, as well as how much and how often we have it. We don’t believe that all red meat is bad quality or bad for you, but we do believe it is important to be super picky about it….
Rainbow Chicken Veggie Bowl
If a name like rainbow chicken veggie bowl doesn’t catch your attention, I don’t know what will. Maybe the ridiculous beautiful and colorful photo of the best dish I have eaten in months?
If am being honest, I have been in a bit of a dinner funk lately. I find myself challenged and stretched to do it all sometimes. Between keeping the house clean, dealing with a stage 100 clingy baby, playing with wooden blocks nonstop, creating content for my site, copywriting for others’ sites, and creating meal plans for clients, I feel like time is running short.
Yet I have a desire to have a hot dinner on the table for my husband every night when he comes home from work. (Make no mistake- he does not demand this of me. It truly is a desire of mine)….
California Avocado Chicken
This California avocado chicken has me drooling, y’all.
And that’s a big deal. In case you don’t know the backstory, I pretty much avoided chicken like the plague for basically my entire pregnancy, and I haven’t really learned how to deal with it since. Honestly, I think I can count on one hand the number of times I have truly enjoyed chicken since having my baby. I can’t really explain it. It’s just… chicken.
But this. This California avocado chicken is the real deal. It is perfectly juicy and tender, and so full of flavor. It is exactly how a chicken breast should be.
And that’s without the California avocado goodness on top.
Can I just share another little backstory? I actually never even tasted an avocado until I was nineteen years old and lived in Colorado. I remember some college friends literally being appalled when I told them I had never had guacamole. It just wasn’t something we ate growing up.
So they took me to Chipotle and ordered some chips and guacamole and changed my life….
DIY Chipotle Burrito Bowl
Chipotle is life, y’all.
Okay, not really, but I do love Chipotle. I have at least one friend who is totally frowning on me right now- you know who you are.

Vegetarian Power Bowl
I used to be against vegetarian meals. Seriously, I’d confidently proclaim that God made meat for me to eat.
But the issue was honestly just that I really felt like I could NOT get enough protein in a vegetarian meal. And when I don’t get enough protein, I tend to overeat because I am just not full.
I also tend to overeat when food is just incredibly flavorful, but that’s a different problem….
