I am going to just keep this one short and simple… Just like the energy bites.
I have needed to come up with a quick and easy energy bite for a long time. Over the last week, in the crazy routine of life, I found myself not only searching for a quick energy source on my way to a workout, but also looking for something nutritious and filling that I can pop in my mouth when I just don’t have time for lunch.
This 5 ingredient energy bite absolutely meets both of those needs. It is a super easy pre-workout fuel source, but it is also pretty filling and entirely delicious. I can eat two of these for lunch with a piece of fruit or a few strawberries and be totally satisfied.
Oh, and another requirement for me was that it did not have peanut butter. Don’t get me wrong, peanut butter is amazing- but I had one too many sick experiences with it while I was pregnant. If you are a peanut butter lover, you can absolutely use peanut butter in this recipe with zero issues!
Oh, and you can probably use honey as well, although that was not my sweetener of choice this go around.
The five chosen ingredients are: Maple syrup, almond butter, oats, flaxseed, and chocolate chips.
If you use peanut butter or honey in this recipe, you may need to change up the amounts a little bit. Just start small and work your way to the right consistency.
Also, these seem at first like they won’t hold together, but once they have chilled in the fridge for a few hours, they hold together perfectly. As the flax absorbs moisture, it basically acts like a glue and binds everything together!
They can be stored in an airtight container on the counter for 2 days, or in the fridge for up to one week!
